Guest guest Posted December 23, 2003 Report Share Posted December 23, 2003 now i look at tryptophan in cheeses and there is possibly the same issue with yogurt is that bacterially culured cheeses are destructive of the tryptophan.......... the bacteria catabolise it. unlike say cottage cheese(creamed in the following link) which has about 1.1% tryptophan cultured cheeses like brie, camembert cheddar contain about .3% tyrptophan. http://www.moondragon.org/nutrition/foodguide/dairy.html whey is about 1% trytptophan. so there is some sort of trade off of bacterial fermentation reducing tryptophan and proably other nutrients as well as lactose. > > Hi all.
