Guest guest
Dawn: I am incredibly lazy, to say nothing of cheap, and do not have a springform pan, nor would I probably use it if I had one. You only need one if you plan to unmold the cheesecake to serve it (so as to impress guests I s'pose.) I use an ordinary cake or pie pan, whatever's handiest (told you I'm lazy), and yes, the water bath is a good idea, then cut/serve the cheesecake just as you would any other kind of cake. Hey, I'm lucky to just get the thing made--fancy is out of the question!
