Spaghetti squash

Hi everyone,

Hope all of you had a wonderful holiday and wish everyone a healthful

and healing 2004.

My question was about spaghetti squash. We have just started adding

more veggies, and I tried making " spaghetti " today. I steamed it for

about 30 mins, and was able to scoop out all the strands from the

squash just like BTVC said. However, I was just wondering if I am

cooking it enough. The strands dont seem really " cooked " , they are

sort of crispy. I am wondering if thats how they are supposed to be

or if they need to be in the steamer longer. The book said that if

overcooked they get all mushy, so I'd appreciate any input on this.

I've never boiled spaghetti squash (I know you CAN). Usually I

microwave or bake it. Yes, the strands are usually rather stiff

(they bend like limp noodles, but are crunchy when chewed).

Once I baked it " too long " , (longer than called for), and it was

softer, softer than I like it (but still worked OK).

I cut my spagetti squash in half lengthwise and put the halves cut side down on

a baking sheet....... bake in 350 degree oven for about 40 minutes. This makes

them a little bit more done.... but the strands do still have a slight crisp

texture to them..... not soft like a noodle. Takes some getting used to.
