" Anyway, to answer your question -- all canned vegetables are out because most (if not all) of them have illegal additives, especially some form of sugar. Even if it isn't listed on the label. We do it with green beens and now asparagus and hide it in meet loaf. My daughter doesn't even notice. Before the diet, we used to use baby food but that is illegal. Same thing as baby food though. Reason being, that even though they say 'no added sugar' on the label, fact is the sugar could have been added before 'they' got it. Others can add more about the labeling laws in this country etc... Bottom line is you can't trust the labels and it's not worth the risk and is therefore NOT legal. Good news is that pear sauce is pretty easy to make. I like baking mine ( thanks to who ever suggested that!) as it turns out thicker and you don't have to watch it so closely. Just peal, core and slice. Then after it's baked, just blend and pour into ice cubes tray, freeze, then pop out and store in Ziploc bags. It's takes seconds to defrost one in the microwave. There is just a handful of items you can buy off the shelf that are legal. Sure makes shopping easier! I spend most of my time in the produce section now. :-) Carol in IL ps127@... An example of legal canned fruit is Dole Pineapple (tidbits, rings or crushed) canned in it's own juiced as opposed to the words " juice packed " which could mean other juices have also been added. The word " OWN " is the key. Guest guest Posted December 22, 2003 Report Share Posted December 22, 2003 Hi , How about preparing the fresh or frozen beans so that they are more like the canned stuff. Since canned vegetables are cooked at high temperatures the texture is a lot softer and different from steamed or even regularly cooked vegetables. Salt and/or sugar etc. are also sometimes added to canned vegetables. So that's two things to do to the fresh or frozen beans. Cook them until really soft and add salt and or a little honey. The other thing to help simulate a canned bean would be cooking in a pressure cooker (if you have one). Otherwise a crock pot for a long, slow cook might help soften them more like canned beans. Please remember to slowly add and gradually increase new food items to guage any possible reactions. Also, it is too early to start with dried beans if you are just beginning the diet. Fresh or frozen should be okay. (Just go slow, did I already say that? ) There is a very tasty recipe for lima bean latkes at http://www.scdrecipe.com/r_003_00280.html . It calls for dried beans but may work with well-cooked fresh or frozen limas also.
