Guest guest Posted January 6, 2004 Report Share Posted January 6, 2004 We make ketchup as follows: I think I got the recipe from a SCD recipe site. Pour tomatoe juice in a wide pot. Add 3 tsp of vinegar. I also add a little legal onion powder, garlic powder, salt, and pepper. Reduce heat and simmer for a few hours until consistency is like ketchup. Remove from heat and sweeten with a light honey such as clover and/or an artificial sweetner such as stevia or sweet-n-low. I like to use both honey and stevia so that the ketchup doesn't taste too much like one or the other. Seback Noah (5yr old 1 month SCD) SCD-friendly school snacks?? and SCD-legal ketchup? Hi, My 3 1/2 year old ASD son is not yet on the diet, but I'm trying to phase out/in any illegal/legal foods. Currently he is GFCF and typically brings fruit snacks to school each day for his snack. These are not legal on SCD - can anyone give me any snack tips for a very picky little guy? His current diet is GFCF but unacceptable by any nutrition standards. Ketchup, Tostitos, peanut butter, canned corn or peas - those are the mainstays. I'm trying to phase out the illegals as we use them up so we don't waste much. He has been stealing cookies from his classmates and most of the time they can stop him from at least eating a bit. These four recipes are in the cookie section. In the snacks section, there is a recipe for fruit leather. I know that raw fruits are not introduced until later in the diet, but I wonder if you could cook the fruits first, then use them to make the fruit leather? I got the infomation that I cut and pasted below from http://www.breakingtheviciouscycle.info. The information came from the illegal/legal list and the knowledge base. Stevia-Not scd legal. It's molecular structure resembles a steroid and the effects are unknown. Stevia Elaine writes: Stevia belongs to a family called Terpenoids. According to my book called The Organic Constitutents of Higher Plants by Trevor , 2nd edition, page 158, " This class of glycosides (terpenoids) often have physiological effects on mammals and microorganisms. " Perhaps the affect is good, perhaps it is bad; I don't know, but its molecular structure resembles a steroid. It is not SCD™ legal. Seth writes: There are all kinds of steroids. The ones we take for IBD (ie prednisone which mimicks cortisol) reduce inflammation and scale down the immune system. But there are steroids that do the opposite.
