Do you wait until they have turned brown? I think it takes me an hour to cook 2 batches of carrot chips. They also get more crunchy as they cool. They are tricky though. Cook it on 350 till browned. Watch out when it starts to brown it goes fast. It crunchy and sweet. ~Sheri mom to 8 yrs. and was a very picky eater. I rolled them very thin then baked at 325 about 10 min. then I put them in a warm oven , the lowest mine went was 140 dgrees for about 2 hours.they were soft when I took them out but crisped up when they cooled. Guest guest Posted January 6, 2004 Report Share Posted January 6, 2004 Penny - I just fill a pan with a couple of inches of canola or safflower oil and let it heat while I peel the carrots and then cut them in my food processor with the thinnest blade I have. I throw one carrot chip in the oil to see if it is hot enough. If it doesn't immediately start bubbling when I throw in the chip, I wait a few more minutes and try again. I think it may also be important not to put too many chips in at a time. I seem to have better luck if my carrot chips have just been peeled and cut right before I'm going to use them, are at room temperature and if I don't put too many in the pan. Then, I just watch them and occasionally stir. When they start to kind of clump together as I stir, I would guess it usually takes about 10 more minutes until they are done. Once they start to brown, I scoop out a few and put them on a towel and let them cool. If they are crunchy when they are cool, I pull the rest out. You have to be careful though because they go from being done to getting burned very quickly. I have to say, even with all this, mine are usually crunchy but not always the way that I want them. It seems to me that a kid can't actually hate that many foods. But he THINKS he does, so he won't even give them a chance. We've all done this... see a new (foreign) dish and think " oooh, yuck " , without even giving it a chance. What happens if you make him eat it? I don't buy into bribing children to eat because I think it sets you up for a continued power struggle. How is his receptive language? Do you still have illegal foods in the house that he is " holding out " for? (and yes, I realize that he has been on the diet for a long time to still be holding out) What did he eat before SCD? Guest guest Posted January 6, 2004 Report Share Posted January 6, 2004 Jody: You have never seen a kid be able to clinched his mouth and jaw shut as much as Kenzie when I've tried to get him to try something. When I've done it in the past it's been a no win situation. We both get angry and it creates a terrible food environment. I have illegal foods for the girls locked in a cabinet out in our store that Kenzie doesn't even know exists. We have a store attached to our house. They have to sneak it into their rooms. Before SCD I had him on GFCF strict from the time he was 2.5-4.5. No big changes. I discovered digestive enzymes and got a little more adventurous. Eventually I was letting him have pretty much what he wanted (no casein) as long as he had enzymes. He loved corn chips and french fries. He would have lived on those if I had let him. He also ate chicken, steak, spaghetti, pizza, burgers only with a bun though, crackers, pop tarts, etc. Never ate any fruit or vegetables. Thanks for trying to help me on this. They are extremely crunchy. I have seen that many people also use those to make chicken nuggets., etc. Hope that helps. Also, does he lie cookies? I make Hannah cookies, but i hide chicken breast in them (processed really fine in the food processor), I hide all kinds of things in almond/pecan flour breads and cookies. But I wanted to let you know you should certainly be able to get the carrot chips crispy. That is one of the few things Sam will eat. Actually now they do not have to be crispy for him to eat them - he now eats them just baked in a little olive oil and they are still orange and carrot consistency. So hang in there - Sam is (or was) always a crunchy kid as well - the crunchy chips really helped us and have led to this new tolerance of less crunchy foods. Also I take zucchini and squash and coat them in olive oil and egg and bake them and they come out a little crispy. This way you are also getting egg into him. Sam hates all meat, so I am happy to get egg into him. We also exchange a bite of hamburger for a few carrots or squash fries - but he is slick and takes very very little bites, but we are working on it. But try the fries - they may work with the egg and oil. Please email me privately if you would like - like I said I am in the same boat as you. I am getting him to bite hamburger, but he takes tiny tiny bites. I am hoping he gets over his sensory issues with meat over time. Meanwhile we will stick to sneaking it into the muffins - he really didnt like the pancakes. Ugh!! I have not been able to find the no sugar bacon - I wonder if he would eat it?
