Just curious. What if I buy the cheese and hold it in my fridge for 60 days

before using it? I think this is the only goat cheddar that Whole Foods

carries near me. Would this make it legal?

Carol, what were your symptoms like and how long did they last (and how long ago

did this happen to you)? Were they like I'd described for Ian?

Woolwich Goat Cheese

, this came up a long time ago and Woolwich Goat cheese is not legal.

I got quite ill from it, assuming the operative word was " goat " and not aware

of the aging requirements of at least 60 days.

The usual, stuffy nose, swollen waste, dizzy. lated about fifteen minutes.

I tried the cheese over a year ago thinking " Goat " meant " Good. "

At the bottom of the list of legal cheeses, I posted that I use Goat

Gouda and Manchego sheep cheese and Pecorino Romano (Sheep romano).

Our Sam's Club carries the Pecorino Romano. I get the gouda and

Manchego at our HFS.

Hi, ,

I did tell Elaine that the Woolwich representative said that it ages after it's

wrapped. Per Elaine, this was not acceptable.... she used the example of

Velveeta. The bottom line per Elaine, was that it had to be aged 60 days at the

factory.
