Kerry books his time off work 2 or 3 weeks in the spring and then again in the fall. He usually gets around 2 weeks in the fall. Starting in September he works over time and banks it for time off, and since he hasn't called in sick once this year, I am sure he will come up with some sort of illness come hunting season. lol Like they don't know what he's doing. We don't grind the deer meat, we have someone that cuts it all up for us. And the cost is nothing, usually around $30 if that, depending on how big the deer is. Kerry hangs the deer in our shop and it hangs for a day or two and then he takes it to the butcher. Last year we had a big surprise. Kerry shot the deer, did what he had to do to the deer, took it to the butcher and when we went to pick up the meat, the guy said to Kerry come here I have something to show you. The butcher found an arrow head in the spine of the deer. He lost a couple chops because of it. And Kerry figures the meat was a little tough because the deer was probably under a lot of stress moving around with that arrow head in it's spine. It makes for a great conversation, that's for sure. We have a couple deer stands up in our woods. Last year Kerry got a deer and then a week later his brother in law got one. I am hoping that my father will get one this year. We send the people up into the woods with one of those radio things, and if they need us they just beep for us, and then whisper if they want to tell us something. I was thinking we could make a business out of it. Kerry even made up a sign for our driveway. In big bold letters he put " Deer Hunter's Park Here " . Everyone got a laugh out of it. We are in the process of building a camp up in the woods, nothing too big, no power, just a small building with the basics in it. Deer is so lean that I have to spray a pan with cooking spray or it will stick too bad to even turn a burger! I mean, to make meatloaf - You have to use bbq suase or extra egg - something for moisture because there is NO fat!....I mean 3/4 way done, when you'd usualy take it out and drain the greas off the top --- nothing - dry as a bone - I put a layer of bbq suase on top to keep it moist! My uncle butchers ours. I don't like deer meet unless he butchers it or I have the butcher do it his way...there is waisted meat - but it is THE best - better than beef. There is a certain area that is cut away and thrown out so it desn't get the rest of the meat taisting funny. And He NEVER cuts through bone - NEVER - it makes the meat taist funcky. If I make a steak, roast, burger, anything at all with the deer - you wouldn't know it was deer but you would think it is a very lean beef that is super tender and seasoned well. You could throw ten lbs of peanut butter on the deer meat, and I still won't touch it. Same goes for beef. I don't add BBQ sauce....I add a bunch of other stuff, the way his mother use to make it. That part of the deer that is cut out and thrown away, if I am correct when Kerry guts the deer himself that is when it is cut out. I have heard of the one part that can contaminate the rest of the meat. So as long as Kerry is happy with the meat then that is all the matters. I could care less, I don't eat it.
