There are many types of mangoes... But the ones you get in the midwest are

always the orange-sweet-fruity type. Squeeze one:

If they are hard as rocks, they are NOT ripe. (But they can be used as an

ingredient in Indian Chutneys that way-- I've never made them, but the

recipes call for the unripe ones.)

If they seem resilient with a little give, they are nice and sweet. This is

the way I like them. I guess I'd say they are sort of like peaches-- you

don't want them really hard!

If they are really squishy, they will be very very sweet-- and some people

prefer them that way.

Like bannanas they will ripen slightly in your fruit bowl. If you want to

eat them as a fruit, buy ones between " resilient " and squishy. If you get a

squishy one, eat it that day!!
