Guest guest Posted August 14, 2002 Report Share Posted August 14, 2002 Zucchini Spaghetti patti 2 c. diced unpeeled zucchini 1/2 c. diced onion 1 3/4 c. (one 15 oz can) Hunt's Chunky Tomato Sauce 1/4 tsp. dried minced garlic 1 tsp. Italian seasoning 1 tsp. Sugar Twin or Sprinkle Sweet 2 c. hot cooked spaghetti, rinsed and drained 1/4 c. (3/4 oz) grated Kraft fat-free Parmesan cheese In a large skillet sprayed with olive-flavored cooking spray, saute zucchini and onion until tender, about 5 min. Add tomato sauce, minced garlic, Italian seasoning and Sugar Twin. Lower heat. Cover and simmer 10 min. For each serving, place 1/2 c. spaghetti on plate, spoon about 1/2 c. sauce over spaghetti, and sprinkle 1 tbs. Parmesan cheese over top. Serves 4.
