Thanks Susie, I do eat protein. In fact, for many years my husband has fixed

tacos for us on Saturday nights. Well, I've not given up my tacos. As I sit

here typing this, he is in the kitchen preparing tacos. I have cut way back

on fried foods, but do have eggs most weekends. During the week, I have

chicken, turkey, even ham or roast beef sandwiches. Also, if I bake cookies,

I will eat 2 of them. Usually make my 2 smaller than the others.

Eggs are actually not all that bad for you. After years of eating practically

none, I started having about 6-8 a week (every other day, 2 for breakfast)

and much to my surprise my cholesterol and triglycerides were even improved.

I am, as mentioned in earlier post, keeping my carbs under 50 per day, tho. I

don't take any meds but I do take insulin, and I exercise regularly. I'm not

overweight and it seems I'm a delayed-onset type 1 (diagnosed at age 60) .

The problem with fried foods is that it keeps your BG high, so that your peak

looks

I don't find this true for me at all. I do no more than 30 GMs carbs a day,

high protein, meaning I eat mostly protein.

I get my carbs from low carb veggies, I fry my meat and chicken, sausages,

even some of my veggies, etc., in olive oil.

All my labs are within normal values, and I do have a weight problem, I do

insulin as my choice for dm2 control.

I have insulin resistance as my main problem in diabetes. So this is why

exercise and low carb work for me.

My high blood pressure is now non existent due to low carb.

I'm on 10 mg zestril mostly for kidney protection from diabetes complication

as I already have neuropathy.

But I'm showing signs again of low blood pressure, so I may have to go to 5

mg zestril, I'll see DR soon. After I take med, I get so light headed, like I

did before when DR had to get rid of my other 5 high BP meds I used to take

in my high carb days.

to me low carb means no flour, potatoes, rice, bread, any cereals, grains,

even tortillas, etc., called by some here as the white diet.

Seems wheat in combo with fat is the culprit here, as far a low carb teaching

goes. It works for me, my tryglycerides were so high at first, now 180 or so

the last several months or so.

I follow atkins and Dr. Bernstein's diabetes solution.

Susie and All:

I have been lurking lately, but wanted all to know that I am watching and

learning.

My daily walks are now up to 40 mins a day..my goal is 60 mins a day.

I have lost 10 lbs now.

My BG numbers are between 70-120 fasting and under 180 after meals.

Thanks for all the help and wonderful information.

Now if I can only stop the numbness in my feet. I know I shouldnt complain,

many of you have it so much worse than I. I pray for all of you every day.

Evern though I dont post, I read every message every day.

I was diagnosed in August. When I talked to the educator she put my target

at 160 2 hrs after eating. You are right, I am trying to get it down lower.

My husband grew up in Arizona and he uses the corn tortillas to which he adds

ground sirloin then deep fries them. I then add no-fat cheese, salsa,

peppers, tomatoes, onions, etc.

I do have a steak about once every two weeks. Tomorrow night for dinner we

are going to have pork chops.

What meds? Congrats on your weight loss. But I see the doctor has you on a

starvation diet. We don't encourage that. For one thing, you need enough

food to keep your digestive system going, and for another, that little food

intake is often unsustainable over the long term, and can lead to weight

loss resistance. (Your body senses it is starving and makes adjustments so

that it can operate more efficiently.)

A carb limit of 35 grams per meal is pretty good. But I think you need to

eat more food (more protein and healthy monounsaturated fats, that is).

Hi Sue. You can answer that for yourself, kiddo. Test before a meal. Eat a

high-carbohydrate meal and test 1-2 times, 1-1/2 hours or so afterward. Then

try another meal, this time keeping the carb intake extremely low, and

repeat the glucose testing.

When I say " fried foods " give table shaped peak as opposed to mountain, I

meant deep fried, not pan fried...pan fried is okay. Vicki

Well, not everyone is counting carbs. I don't count anything but food group

exchanges. I also am following low fat with 1,500 calories per day. I have no

idea of the carb count. I have removed some foods from the exchanges lists

because I don't like my two hour pp levels if I eat them. Hmmmmmmmm. Do I

understand correctly that your 2 hour pp aver age is 142 or less? Of course, we

all differ, but if mine were that high, I'd be trying to lower it a bit still.

My goal is 120 or less.

Hi everyone.

What I am reading is that everyone is on low carbs. When I was diagnosed in

August, my doctor put me on a high carb, low fat 1200 calorie diet. I am to

eat between 33-45 grams of carbs per meal. My cholesterol was higher than

she wanted it to be and I needed to lose weight. I am checking my blood

twice a day and my weekly averages have been in the 80's (fasting) before

breakfast. Two hours after dinner, my weekly averages have been 142 and

less. Since the first of August, I have lost 22 lbs averaging about 2 lbs

per week. I walk at least 30 minutes almost every morning. Usually 10-15

minutes on the treadmill at night. I feel great, very seldom get tired. If

I do get tired, I go for a short walk and it perks me right up.

I go back to the doctor in mid December for blood work and I hope and pray

that the numbers are going to be much less than they were in August. I am

taking medication and my goal is to discontinue that.

Eunice, you don't have to feel guilty about eating meat (unless you're a

vegetarian)...meat has no carbs to speak of and unless you eat a huge hunk,

the protein isn't usually a problem either. I alternate between meat (beef or

pork), fish, chicken and when I can get it, ground buffalo -- it's very lean

and tasty! Vicki

Sharon, you don't need fancy charts...I just keep a small spiral pad handy --

in my purse or out of my purse when I'm at home -- and write down everything

I eat on one side and my BGs for the day (with the time) on the other side of

the page. Really simple.Then of course I refer to it frequently. Vicki

I'm thinking more of a hunk of steak, etc. If you eat tacos, you can order

special low-carb taco shells off the internet.

Bread is a major glucose spiker. Search for the lowest-carb bread you can

find (rye is a good choice). Even better is to find special low-carb bread -

at a local outlet or on the internet. And I eat mine open-faced, which cuts

the carb count in half.

Do you know what the carb count of 2 of them is? I would guess it's around

70, which is more than some diabetics eat in a whole day. At first it takes

a great deal of detective work to snoop out all the carb sources in our

modern diet. Most Americans, e.g., eat 300+ carb grams a day.

Diabetes is not really a mystery disease. Your glucose basically isn't

spiking, because your carb count is so low. Also, you are an insulin-using

2, whereas Vicki is a 1. I try to keep us focused on understanding the

reasons for our different reactions. I think that's better than in some

groups, where they just throw up their hands and say, " YMMV! " For those 2's

who eat more like I do, i.e., approx. 100 carb grams a day, fat intake along

with the carb intake can mute but prolong a glucose reaction.

I'm hopeful your neuropathy will resolve.

Are you monitoring your b.p. and adjusting meds accordingly? I take a fluid

pill and 2 beta blockers, but alternate between 2 and 3 ACE inhibitors,

depending on my blood pressure.

That sounds excellent. Some folks think that lower is always better, but

recent studies show the greatest longevity with triglycerides between 170

and 220.

Hi, Eunice.

The last thing I would ever want to do is confuse or upset you, but your

educator is a bit behind in her information. I'm sure someone will jump in here

to correct me, but it seems to me that the most recent research shows

thatcontinued levels above 140 leave us vulnerable to complications of diabetes.

I'm so glad you're still working on it.

It tastes like the very best low-fat beef, i.e.black angus hamburger but it's

even leaner. If there's a Trader Joe's near you they have it in frozen

patties now and then...I always stock up when they have it. Also here's

(Portland, Or.) theres a local chain (Fred Meyer's) that gets it in twice a

year fresh.Also one of the local " health food " stores stocks it in their

frozen foods section.

Vicky, I'm not feeling guilty about what I eat. I too, love buffalo meat,

but don't eat it very often. Still hoping my husband kills a deer this

season, but probably not since the deer population here is way down.

I have enough faith that I know my numbers are going to come down much lower

than what they are. This is including my cholesterol and weight.

I'm a fighter and I don't give up.

I want you to feel heartened. Many of us have been able to reverse the

neuropathy. The trick is to maintain our bg's as close to 100, as much of

the time as possible. That way, our body behaves pretty much like that of a

normal person. Congratulations on the weight loss and exercise program!

The wonderful singer Harry Belafonte sings a great song about overcoming

racism. He sings about the water wearing away the rock, and implores:

" Patience, gentlemen ... " The numbness, tingling, and pain can get so

frustrating. But give it 6 months ... then give it a year ... then another 6

months. It took a year and a half for me to feel Normal. While you plug away

at repairing your body, , know that you are among people who truly

understand the commitment involved.

Well here in the well settled upstate NY near Albany we have a Buffalo Ranch,

i'd never thought of trying the meat... but its Gem Buffalo Ranch.....
