These are the cookies that HE makes.

He tries to make the recipe his secret.

But here you go. If you like chocolate,

these are unbelievable.

Espresso or Mocha Cookies

Preheat oven to 350 degrees

1/2 c unsalted butter (1 stick)

1/2 c Semisweet chocolate chips

1 Tbl Instant espresso crystals

(I got it at an Italian market

It's called " Medaglia D'oro "

and it comes in a small jar)

1/2 c Sugar

1/2 c Brown sugar, packed

1 1/2 c All-purpose flour (less if you like crunchier)

1/3 c Unsweetened cocoa powder

1/2 tsp Baking powder

1/4 tsp Salt

2 Eggs

2 tsp Vanilla extract

1 c Semisweet chocolate chips

1/2 c chopped pecans

# 1 - Use a double boiler and melt the butter,

chocolate chips and espresso.

let it cool for about 10 minutes.

(or just heat on low in a saucepan)

# 2 - Mix the dry ingredients together and

then add the eggs and vanilla. Mix the

ingredients and then add the chocolate

/espresso mixture. Make sure the

chocolate is cool when you pour in with

the eggs...don't want scrambled eggs.

# 3 - I use regular chocolate chips.

# 4 - The mixture is going to have a shine to it.

Depending how your oven works, (some are

hotter than others etc.... check on the cookies

after 8 minutes. They will puff up a little, and look

pretty much like when they went in. You might take

them out when there is a little shine left and when the

edges have a crusty form. It depends if you like

crunchy or soft cookies. I like soft, and I have

a hot oven, so 8 minutes is fine.

# 5 - I recommend you seal them when hot in a Ziploc bag,

because they dry out and get hard fast.

Yeah, too bad they don't make Ziploc's people sized.

Sleeping in one would be a great wrinkle preventer.

You could take a hot bath, and zip yourself in for

the night. I won't even comment on the " hard "

part.
