Homemade Mayonnaise 2 egg yolks 3/4 tsp.salt pinch of white pepper 1/2 tsp.powdered mustard 1/8 tsp. sugar 4-5 tsp. lemon juice or vinegar 1 1/2 cups olive and canola oil mixed...can use olive oil but it is a little stronger/oily 4 tsp. hot water Place yolks,salt,mustard,sugar,and 3 tsp.lemon juice in processor bowl...buzz 15 seconds on low speed.Now,with motor running,slowly drizzle 1/4 cup oil (use medium speed) As mixture begins to thicken,continue adding oil in a fine stream,alternating with a spoonful of hot water and remaining lemon juice. If this gets to thick add another spoonful of hot water and blend. Yield: 1 1/2 cups This will not keep as long as store bought mayo..store air tight.Use within about 5 days Sometimes I make this and put a squeeze of lime juice if I want a flavor for a black bean,corn,red cabbage,leaf lettuce, onion,grilled chicken breast salad.My favorite.. Makes a good sauce for seafood with horseradish and tomato ketchup. 7a.
