Surely there will be something here to please everybody! And if you're feeling lazy, there are several good low-carb BBQ sauces available at internet sites such as www.low-carb.com, www.synergydiet.com, etc. The Low Carb Connoisseur's Recipe Exchange ************************************************** Date: Sat, 13 Mar 1999 15:20:43 -0000 BBQ Sauce for Chicken Enough sauce for 10 chicken halves. I've actually frozen this before, you simply have to " blend " it again when it is thawed. Do all in a blender until it is creamy looking and a bit foamy on top. 1/3 cup salad oil 1/3 cup vinegar 3 Tbsp. lemon juice 3 Tbsp. water 1 Tsp. salt 1/3 Tsp. pepper 1 Tsp. poultry seasoning 1 egg This can be used as a marinate to soak the chicken, and then as a basting sauce to use all during grilling, from start to finish. We slow cook halves for about an hour and a half. We baste right down to the last turn or two and then stop, so that both sides of the chicken get a final exposure to heat to take care of any raw egg salmonella. It really does exist out there, even if we have never had a problem with it. Best news....according to cookbook program.....1 carb/batch for 10 halves! ----------------- BBQ Sauce 1 1/2 Tbls tomato paste Few Drops of Tabasco sauce 1/2 tsp paprika 1/4 tsp dry mustard 1 tsp salt 1 clove garlic, minced 1/3 cup veg. Oil 1 tsp grated onion 1/2 cup cider vinegar 1/4 tsp ground ginger Combine ingredients. Makes 6 servings at 2.5 g carbs per serving.Copied from The Low Blood Sugar Cookbook by Francyne . ------------------- BBQ SAUCE 1/4 c vinegar> 1/2 c water> 1 tbs mustard (prepared)> 1/2 tsp pepper> 1 1/2 tsp salt> 1/4 tsp cayenne> thick slice lemon> 1 med onion> 1/4 c butter> 1/2 c unsweetened ketchup> 2 tbs worcestershire (unsweetened)> Simmer all but ketchup and worcestershire sauce for 20 min. then add remaining ingredients and boil for one min. That's it!!!! Sorry, I don't have the carb count, but I don't think it would be too much per serving. Tangy BBQ Sauce 1 stick of butter 1/4 cup vinegar 1 cup tomato sauce 2 Tbsp. Worcestershire 1/2 Tbsp. salt 1 Tbsp. mustard 2 tsp. lemon juice 1 tsp. hickory liquid smoke 4 tsp. Sugar Twin Melt butter, add vinegar and then other ingredients. Stir until well blended. Bring to a boil, lower heat, and let simmer a few minutes. Not sure where I got the recipe, but I don't think it was from here. Tangy Barbeque Sauce 2--4oz. cans tomato sauce 1/2 cup Splenda 3TB. worchestershire sauce 2 TB. liquid smoke 1 heaping TB. of horseradish 2TB prepared mustard 1 1/2 tsp. garlic powder 1 1/2 tsp. black pepper, use more if you want hotter sauce 1 stick butter salt to taste Mix all the ingredients in a a saucepan and simmer for 15 to 20 minutes. It will keep about 2 weeks in the fridge. Keep in tightly covered jar. Total Carbs for whole batch is figured to be 25. I got this from Dana Carpenders " Hold The Toast " lowcarb e'zine. I've used it on ribs and chicken. It is great! Dana saved my summer grilling. The following is her recipe and nutritional analysis. Enjoy! Carol in Northern Calif. Sugar Free Spicy BBQ Sauce 1 clove garlic, crushed 1 small onion, minced fine 1/4 cup butter or oil 3 - 4 TBLSP Splenda 2 tsps. dark molasses 1 tsp. salt 1 tsp. Colmans dry mustard 1 tsp. paprika 1 tsp. chili powder 1/2 tsp. black pepper 1 1/2 cups water 1/4 cup cider vinegar 1 TBLSP Worcestershire sauce 1 TBLSP horseradish 1 TBLSP liquid smoke (or substitute a good smoky bacon chopped, cooked and crumbled ) 6 ounce can tomato paste In a saucepan, cook the onion and garlic in the butter or oil for a few minutes. Then whisk in the tomato paste and liquid smoke and let it simmer another 5 - 10 minutes. Store in a jar in the refrigerator.
