Guest guest Posted July 4, 2001 Report Share Posted July 4, 2001 Hi, all. Well, I woke up with a low reading yesterday. Had 2 eggs, 4 slices of bacon, and 8 oz. of V8 juice for breakfast. Went up to 107. Sure tasted good, too. My second meal of the day is usually my biggest one. I had a reasonably low carb, Healthy Choice, TV dinner, with a salad. I was out of salad greens, so I opened a can of peaches. Had 3 halves, with a couple of TBSL of creamed cheese, and some walnut halves. I forgot to test, until 3 hours after eating this, and my bg was 199!!! That does it for the canned peaches! This morning I tried two, low carb, (6 each) tortillas, spread with cream cheese, and two deli slices of cooked ham, rolled up and nuked for a minute. Served with celery sticks, salsa, and green olives. My bg rise was only 22 points! The tortillas were really yummy, too. I am not much for cooking :-) The other day I ate a " low carb " pizza crust that zapped me up from 96-211. Needless to say I'll never do that again. I walked for 1.5 miles/30 mins to get it down fast! I am not much for cooking :-) **Just because I'm always in a hurry, I eat the Lean Cuisine, Healthy Choice or Weight Watchers frozen meals that are under 30 carbs for lunch a lot in the winter, when I'm more active in the afternoon. With this heat (in the 100's) we're having I start at 5am and siesta in the afternoon, so my way of eating gets turned around some. Lately I've been eating a lot of LC shakes as snacks and/or half a meal. They're good (and cold!), but I don't think this is a very health practice in the long term - awfully long ingredients list on those things. I think I'm better of with tuna or egg salad on lettuce or in a 1/2 avacado. I did find the Edge LC shakes at Walmart that are only 100 calories, and supposedly 2 g. carbs. Whenever I go grocery shopping, I pull out every Lean ?Cusine and HC TV dinner, and read the labels. Then I subtract the fiber grams from the carbs, and if 35, or lower, I buy it. {:-D I am a widow and live alone. Often, I don't want to cook for just one. So, I make a salad big enough to last for several days. When I do have a TV dinner, I always have an extra serving of veggies, as well as the salad. I often have salad with large shrimp, and some seafood cocktail. I love having an artichoke with it. OR, broccoli. I can eat broccoli both hot and cold, and love it both ways. BTW, I absolutely love my new breakfast choice. Two, low carb, wheat flour tortillas. Spread with cream cheese, some sliced deli ham, and some sundried tomatoes. Roll up and zap in the microwave for 1 1/2 minutes. Yummy............... I have them with diet dr. pepper, and some celery sticks, sliced red peppers, and/or, stuffed green olives.
