Here are some good lowcarb veggies: spinach, cabbage, sauerkraut, cauliflower, asparagus, bok choy. These are all off the top of my head; I'm sure there are a lot more. Just stay away from the root veggies such as carrots, beets, potatos, yams, etc. And some people can even eat these without too much problem. And Carbsmart has a lowcarb recipe exchange that is really excellent with many great ideas for lowcarb cooking. Check it out. You can join at t he Carbsmart site...I think the URL is www.carbsmart.com. Oh yes, lowcarb fruits...most berries (in small amounts) especially strawberries, raspberries, blueberries. Cantalope too. Glenna, I strongly suggest you try and get your brother to read. " Dr Bernstein's Diabetes Solution " by Dr Bernstein. He speaks extensively about being able to stop & in some cases even reverse some of the complicatlions that we diabetics can get. It is perhaps possible for your brother to forestall or even avoid losing the leg if he acts now to get his blood glucose under good control. You don't say what his control problem is, but IMHO, really good control (normal non-diabetic levels) is his best hope for the leg. It is possible for many and surely the potential loss of a leg is a motivating factor. I know you can't make another person do anything, but its worth a try to at least let him know there is hope. Guest guest Posted July 14, 2001 Report Share Posted July 14, 2001 A few more (off the top of my head) are broccoli, artichoke, and green beans do ok for me. I can eat 1/2 of a small sweet potato ok. I can eat a small amount of carrots mixed in with celery or some other lower carb veggie. Salads with cucumbers seem to be ok for me. Some onion seems ok for me. Like my mom makes a great coleslaw with red onion and regular mayo and a touch of dijon mustard and it works great. I have even eaten suger snap peas in small quantities and tolerated them. Yellow squash and zuchini worked ok as does eggplant. So if you like ratatouille (spelling ?) it might be ok. I ate a whole tomato alone and tested 1 hr and 2 hrs after and hardly went up at all. Like Vicki said- eat and test. I am finding more and more things I can eat. Even some whole wheat and oatmeal breads by pepperidge farm.
