Guest guest Posted May 27, 2002 Report Share Posted May 27, 2002 Meatballs: 1 lb. lean ground beef 1 egg or 1/4 cup egg beaters 1/2 cup soft breadcrumbs 1/4 cup skim milk 1/3 cup chopped onions (or 1 T minced dried onions) 1/2 tsp. Worchestershire Sauce Combine all ingredients and mix well. Form into 16 meatballs (or 48 small if using for appetizers) and brown in a skillet sprayed with Pam. Place in a 2 1/2 quart baking dish. Sauce: 1/2 cup ketchup 1/2 cup chopped onion (or 2 Tbsp. minced dried)) 1/3 cup brown sugar 1/3 cup cider vinegar 1/8 tsp. pepper Combine, mix well and pour over meatballs, turning to coat. Bake uncovered at 350* for 50 -60 minutes Yield: 16 large - 1 meatball with sauce = 2 points (or if making 48 small - 3 meatballs = 2 points) Nice with mashed or baked potatoes, green veggie and salad.
