I extend it with lots of sauteed mushrooms, which are lowcarb and low GI too. But I do keep all portions ounder 100 grams. It helps to weigh everything out. ( they are so low that the index doesn't list them). At first I missed the potatoes, bread, cereals etc. but after a few years I do not even think about them anymore. My carbs are spinach, asparagus, cabbage, summer squash, zucchini, romaine lettuce, iceberg lettuce, cucumber, ripe olives, green beans, chard, broccoli, cauliflower, celery, eggplant, kale, kohlrabi, mushrooms, okra, peppers, tomatoes and turnips. I also eat strawberries, peaches and avocados. I do not eat any grain products (except low-carb tortillas for fiber) . My consumption of dairy products is limited to cheese. My point is that I do not miss any of the cereals, breads, pasta, pastries and deserts. I am a type 2 diabetic 73 years old. I have been diabetic for 34 years. I spent the first 15 years following the ADA teachings and ended up in the hospital with two diabetic ulcers on my left foot. After leaving the hospital I obtained one of the first BG meters available (the Ames Glucometer) and developed my own " Glycemic list " , I have not had a reoccurrence of any feet problems, my retinopathy has not progressed, my neuropathy has diminished until I usually don't notice it.
