Brown rice is higher fiber, lower GI. The carbs hit your bloodstream more slowly than white rice. Minute or instant type rice has the heart of the rice grain removed, allowing cooking times to be reduced greatly. They also are missing the portion that gives you any nutrients. Since cooking regular rice can be a pain, I recommend getting a rice cooker, it makes perfect rice without you having to do much at all. Then it was the white and I only had a little bit of it. Now my husband can't have potatoes at all, we only had them once in a while before but now it's completely off his eating list but rice is on the list. So may try having a little of it. I like the faux potatoes made with cauliflower but he won't touch it.
