Guest guest Posted July 12, 2006 Report Share Posted July 12, 2006 Thanks Val,….we too use to make this dessert. We even made a low-carb strawberry shortcake using Almond flour and ½ baking mix. I’ve been buying stuff from some lo-carb online stores, hoping to create my own lo-carb desserts. I am trying to come up with something that will take the place of IC. Pudding is the closest, but I’m not a real pudding fan. Oh I know, maybe a yogurt base that can be frozen like IC? I didn’t eat peaches the first go around, but I think they will be low enough on the glycemic scale. We use Splenda, but I recently bought some Erthitol which is a natural sweetener [sugar alcohol w/o the digestive upset], that the Japanese use in many of their recipes. My hubby used it with Splenda to sweeten the whipping cream, and it wasn’t too bad. If you think of anything else e-mail me and let me know. How are you doing losing? Don’t go too low on the carbs as I read too low can cause all kinds of brain deficiencies. Depression, forgetfulness are a couple. I was keeping mine around 55-60 a day, and it seemed to be okay. Sorry Jackie....I had another brain burp. I forgot to add my recipe for a low carb, no sugar desert. I use berries in this recipe, but I would imagine peach would be just as good. In fact I'm going to use them one day. I by heavy cream and make whipped cream with it. I sweeten it with Splenda and a little vanilla. Then put a dollop of it on some fresh berries (strawberries, blueberries, raspberries, etc...) Use sugar free jell-o {peach in this case} using up to 1/4 cup less water and let it start setting up - still soft - [i would use the juice from the peaches if using canned for the water] Prepare your peaches as you want them - blended may not be to good I like small chuncks Beat the jell-o and add whipped cream Beating until well blended and then stir in the peaches and freeze. Only because I love anything bread or starch. I simply LOVE potatoes!! Fried potatoes, mashed potatoes, potato chips, potatoes au gratin...etc etc. Oh well, what can you expect from a girl born and raised in Idaho? Wish I could help you with the ice cream issue. How about frozen pudding? I used to eat that alot when I was a kid. The chocolate tasted just like fudge bars to me.
