The cook had been drinking "moonshine" corn whiskey the night before and his eyes were as red as fire. General told the cook to bring him some country ham with gravy as red as his eyes. Some men nearby heard the general and from then on, ham gravy became "Red Eye Gravy." Red eye gravy is well known in the South, but little known in the rest of the United States. The gravy is also called bird-eye gravy, poor man's gravy, red ham gravy, and muddy gravy. These hams are very salty and the gravy, made from drippings and black coffee, packs a punch. Red eye gravy stays thin, like Au Jus. Fried salt cured country ham makes the best grease for this. I have made it with fried pork chops.

Sooo....you have a mixture of pork fat, caffiene and salt. Is it any wonder I had a plugged up Coronary Artery! I was raised on food like this. My folks kept a small lard bucket sitting on the kitchen stove, saved bacon grease in it. This was used to flavor vegetables, corn bread and to fry other meat in.

I have eaten in great quantities every unhealthy food that is known to mankind during the last few days. Pray for me now, I need to survive this gluttony!

heard of Red Eye Gravy..Chicken fried steak is foreign to me too. We

Philadelphians know all about cheese steaks( that's cheese whiz...not

real cheese) and soft pretzels with mustard from a street vender....they

are no more healthy for us but they are our comfort foods.Go EAGLES!!!

Joyce, I did have a wonderful holiday with all of my family. We had ham too and cheesy potatoes, green beans with bacon, fruit salad and of course lots of hot bread. I tried Ray's 5 minute fudge this year and it turned out pretty good ( I should know since I ate most of it!) Your holiday sounded wonderful too. Hi Z. i went to Phlly and tried the tastykaks NAH. I tried the "real" cheesesteaks NAH. I'll settle for Little Debbie cakes and a chicken fried steak. but the experience was wonderful even if it was the trip for the birth of a grand child. The differences of culture make us whole. I'll try anything once and then maybe twice. I'm ready for any new challenge. Guess I'm old and set in my ways haha.I use water instead of black coffee for red eye gravy. Having never been a southern gal, I don't know all the delicacies of the land. But one I came to know was Okra when I lived for five years in rural Texas and my neighbor, thoughful but with a mean humorous streak, offered me some vegetables from her garden. She gave me some Okra. I had never seen or heard of Okra so I asked her how to cook it. She replied, "just like any other vegetable". So since I steam all my vegetables, that is what I did. Well if anyone has ever seen KY jelly or Vicks Vaporub melted that is what Okra looks like when steamed, slimy. I couldn't even keep it on the spoon. I had to use a large ladle and offered my husband the first taste (I was too cowardly to try it myself). He put it in his mouth and before he could spit it out, it slid down his throat. His comment, after sputtering and hacking, was "it tastes like elephant snot". Now I don't know how elephant snot tastes but I am sure I don't want to find out. Later on, of course I found out that Okra is supposed to be used in soups or stews or fried with a batter on it. But, I am sure my neighbor had a great laugh over this northerner's first taste of Okra.

Yes Joyce, I had the surgery and am home in a full leg brace. I am doing ok, quite a bit of pain but other than that doing ok. I will be going through a lot of physical therapy. Thanks for the welcome back.
