When I started down this journey, I read many posts on gluten and casein because I truly did not want to change our diet. It just seemed like a lot of work. What I read was that many who were not testing as being allergic, did the diet and improved. It appears that allergies and inability to digest are just part of the problem. Somehow these add to the pathogen and toxin load. I like to think of it as that they feed pathogens. Anyway you look at it, many with other diagnoses (MS, Lyme, Crohn's, etc.) were also improving upon gf-cf. Thus, we did the diet. I think it would be very rare to not improve upon doing the diet. If the improvements are not noticeable, then it's likely due to the fact that other things also need to be done. For example, at my house, several things needed to be done to rid a symptom, not just one. So, it's just part of many things that need to be done. I have also seen many postings of people who returned to wheat and dairy, and did not notice a decline till months later. At my house, some get symptoms right away, and some don't for weeks. But, either way, the wheat and dairy is causing symptoms. I wish we could eat wheat and dairy, for we love it here.
