Because it is fermented for 24 hours it is lactose free and the casein is dentured so it is not ususally a problem. After 9 months we had considerable gut healing. Also as the diet progresses there are almond breads etc, but one usually loses the desire for bread because the diet starves the yeast in bacteria which are usually the things creating the cravings. For support on the diet go to pecanbread yahoo group or the pecan bread website. Incorporate the ideas that Stan has for organic fresh foods and purified water.
