Guest guest Posted July 23, 2003 Report Share Posted July 23, 2003 I make a single serving pudding with one portion of cottage cheese, a little water (blend this first) and a couple TBSP of pudding mix which thickens it up. This would just be a protein in which you have to add a carb...I usually add fruit. As to breakfast ideas, I usually go for protein shakes with fruit or cottage cheese pancakes. JeAnne > Hi. Occasionally as a treat, it wouldn't kill me though You can eat anything for breakfast. Try non-traditional meals. This morning I had hard boiled egg/egg whites, beans, tomato, artichoke hearts warmed up in the microwave. You could substitute a meat source for the eggs. I make a homemade turkey sausage with extra lean ground turkey and spices. Sometimes I'll have that with a carb on the side. Shakes are good for breakfast also. Colleen > Hi. I also put my cottage cheese in the blender, so it is not so " curdy " and I add splenda to it. So sometimes I have sweet cottagecheese and oatmeal. I save my shake for 4:00. For you, that would be really nasty! Have you tried any of the Eating for Life dessert pudding recipes? I'm not sure if they are all authorized for challenges, anyone? You wouldn't want to have a protein meal and then an hour later have a carb meal. As long as what you're eating is balanced, you should be fine. I don't see anything wrong with using the recipes in the EFL book. You just need to pay attention to portion size. I read all the labels the other day after I asked this and Kozy Shack pudding in the little containers (refrigerated only) had Splenda, but all the Jello, both pre-made and powdered, was still Nutrasweet. Yes, I know that sounds a little crazy but it was kind ofnice to just cocoon when it snowed in Virginia. Not when the laundry starts to back up becasue I can't get to the laundromat. That's about the only *really* bad thing about being snowed in. I keep telling myself every winter I have to get one of those shopping carts that fold up so I can drag the laundry to one of the crappy local laundromats (I go across town usually), but by summertime I forget all about it. I checked and I have Yoplait Heart Healthy with 180 calories and Yoplait Carb Monitor with 90 calories. Both are 6 oz. In Virginia we had a laundry room that opened on to the car port so we'd have to go outside to do laundry. I remember that being unpleasant in the winter but I was really happy not to have to go to the laundry mat. Today is laundry day but it's easy here. All of the following are similar in texture and consistency with what you might be craving – flan, custard, brulee and mousse. And don’t forget about Swedish-style baked rice pudding, or bread puddings – if they have enough eggs and cream, you’ll get that creamy texture that satisfies. I sound like I’m writing ad-copy for PuddingEatersAnonymous. Anyway, I’ve found that I end up cutting sugar WAY down because the majority of recipes are WAY too sweet. Another yummy recipe is the Tangerine Vanilla Curd. I substitute the arrowroot for the cornstarch and use raw sugar. That sounds aweful chocolaty I may cut back the amount of chocolate a bit! (I must be getting old!!!) I tried making up my own recipe for a vanilla pudding but I think I added too much arrowroot! It was lumpy and had the texture of viili LOL! It's cooling in the fridge right now, I'll see how it is tonight! I'll try this chocolate one too!!
