Guest guest
I was reading a French-language site in Switzerland yesterday and they made some interesting comments about grains: 1. If you can't eliminate them from your diet completely, just eat them once a day, without acidic food or protein. 2. If you have to eat grains, don't prepare them at high heat (so I guess boiled or steamed grain foods might be less detrimental than baked bread). 2. They mentioned there was some kind of German bread that is baked at temperatures at or lower than 100 degrees F. Anyone ever heard of that? I also forgot that they recommended that, if you eat grain foods, chew them THOROUGHLY. Funny, that's what I decided was needed when I got married and started eating more starch...and had more gas. Chewing more did help alleviate the problem.

Guest guest
: >2. If you have to eat grains, don't prepare them at high heat (so I >guess boiled or steamed grain foods might be less detrimental than >baked bread). A guy in Switzerland invented Meusli, and it is very popular there! Ideally it is supposed to be made of oatmeal soaked all night and eaten in the morning ... but not cooked. I imagine the original version was of course with raw milk, so it was a bit fermented by morning too. >2. They mentioned there was some kind of German bread that is baked at >temperatures at or lower than 100 degrees F. Anyone ever heard of that? No, haven't heard of that one. It would be basically " dehydrated bread " though. I have heard of dehydrated soured dough balls ... baked in the sun .... which are crumbled into soups for flavor and nutrition. -- Heidi
