Penny, that's too cute! I was thinking the same thing with cornmeal

and some other flours. It will be interesting to understand the

technique.

Hi Carol,

You wouldn't let buckwheat, millet or brown rice soak longer than 7

hours, and Sally Fallon says to use whey, yogurt or kefir, but

candida sufferers use fresh lemon juice, 1 tablespoon per cup of

grain or flour.

Hi,

I'm new to your group and have a question about soaking grains. As per

Nourshing Traditions I'd like to try making my bread with soaked grains.

However, I don't quite understand how to do it. Is there anyone here that

does that? Do you soak the wheat overnight and then dry it out and then put

it through a grain mill?

Yes, kefir will do the same thing. On Dom's website

http://users.chariot.net.au/~dna/kefirpage.html he has some recipes for

bread making with kefir.
