I'm new to the group, just transitioning my family from the Specific Carbohydrate Diet to the Nourishing Traditions cookbook eating plan. This book is phenomenal. I am just fascinated by it all. We have gluten sensitivities/intolerance, and not sure about celiac. Has anyone previously gluten-intolerant successfully soaked gluten grains and consumed without problems? Recently, my 4 year old got a hold of some cheerios and I was so upset. It's amazing what foods can do to a person. Anyway, was wondering about that, and also about kefir. Could it cause die-off reactions when you first start drinking it? My son seems to be having a more regressive period also (ADHD type) and just wondering if that could be it.
