Raw Lamb Kidney Tallow

I have a chance to get some Raw Kidney Tallow from lambs for $5 a

pound. From what I read in NT it should be extremely nutrient dense.

This is grom grass-fed lambs with no hormones or anti-biotics.

Does anyone have any info on Kidney tallow? They reccomend this for

sausage but I would probably use it in some recipe raw, maybe mixed

with some butter.

If it's tallow, it's not raw, because tallow is rendered fat. It

sounds more like suet -- the raw fat tissue. If you like it raw,

more power to you!

Well here is a link and they do call it Raw Kidney Tallow. Should be

called Kidney Suet if it really is raw, so I think they may have just

labeled it incorrectly.

I've eaten raw marrow before so I think I could handle Kidney Suet as

well ;).

Strange, I guess I'll have to e-mail them and see if its raw.

Does anyone know how much fat soluble activators kidney fat has? I

can't seem to find info on it anywhere.
