Hulled or Unhulled: that is the question

I am wondering if someone may be able to answer this question for me.

Should I put hulled oats(oat groats) or unhulled oats through my grain roller

and should I put hulled or unhulled spelt, wheat, rye etc through my grinder.

I am thinking maybe it would be better in terms of freshness, to use unhulled,

but I'm not sure whether the result would be palatable or whether it is infact

even possible to put unhulled grains through.

I would be grateful if you may be able to reply with any ideas or information.
