I made this last week and it was so good I have to share:

1. Fry 4-8 strips of uncured bacon in a cast-iron skillet over medium-high

heat

2. Meanwhile, chop finely 2-4 cloves garlic

3. Remove bacon from pan and set aside (in oven if you want them to stay hot),

leaving hot bacon fat in the pan

4. Put chopped garlic in the pan, still on medium-high

5. Remove garlic with a small slotted spoon after 30-60 seconds and set aside

6. Fry 3-4 masa corn tortillas, one by one, in the garlic-infused fat (might

need to add more fat/oil)

7. Remove tortillas and set aside

8. Add 1lb grassfed ground beef to the pan, still on medium high or maybe high

9. Cook until brown on the outside but raw on the inside

10. Serve tacos with everything above and grated cheese, salsa, lettuce,

tomatoes, sliced avocado, etc. If you're like me, you'll need to add a ton of

sea salt despite the bacon and cheese. :D

Now, the way I ate it was *extremely* messy. I wolfed these down like a

shameless American glutton. It was especially messy because the tortillas came

out soggy and greasy, not crisp as I intended. I did not mind though; it was

absolutely delicious. Alternatively, you could add eggs to the mix and serve it

on a plate with knife and fork, with the tortilla on the bottom, and that will

basically be huevos rancheros. Either way, it's a delicious combination and a

great way to use the extreme amounts of fat left over after frying bacon (I get

tired of making greasy eggs with the leftover fat!).
