When I was at UMass I worked in a dining hall and there were some Indian

immigrants there. One of them told my boss and friend, Wayne, that in India

they

never ate mature coconuts and always harvested them when they were young.

" What can one say of a soul, of a heart, filled with compassion? It is a

heart which burns with love for every creature: for human beings, birds, and

animals, for serpents and for demons. The thought of them and the sight of them

make the tears of the saint flow. And this immense and intense compassion,

which flows from the heart of the saints, makes them unable to bear the sight of

the smallest, most insignificant wound in any creature. Thus they pray

ceaselessly, with tears, even for animals, for enemies of the truth, and for

those

who do them wrong. "

[Jafa] Where do you get young coconuts. Even the health food

stores around here don't carry them.

[MAP] I get them from Vietnamese or Chinese grocers. I'm surprised

anyone would even look in a " health food store " for healthy food! I

try to avoid such establishments at all costs! Then again, if

coconuts continue their ascendancy in the alternative health world, it

may become feasible for pill and soy, uh, sorry, I mean health food

stores to start offering them. Or perhaps you could singlehandedly

convert a dozen or so locals, including store employees, to the way of

the coconut, and implement a niche market for a local health food

store. Probably wouldn't be very hard. They taste good.

To eat the coconut meat and drink the water, yes.

When used in cooking, the " mature " coconut is used.

Even today if you walk along the shores of Bombay, you will find hundreds of

street

vendors selling " young " coconuts.

They will crack open a coconut for you and give you the milk.

It makes a great, refreshing drink on a hot humid summer day when the mercury is

pushing

45*C and 90% RH.
