I remember by grandmother always had several jars of aachars lined out on her porch in the sun. The lady who ran the daycare center I went to had her entire terrace lined with every kind of imaginable aachars. However, the commercially produced mustard oil now-a-days (in India and in India grocery stores here in North America) are a far cry from the hand extracted mustard oil that was available during those days.
