Sounds pretty NT to me.

Most people of my generation growing up in India grew up with home made

" achars " .

I remember by grandmother always had several jars of aachars lined out on her

porch in

the sun.

The lady who ran the daycare center I went to had her entire terrace lined with

every

kind of imaginable aachars.

Even thinking about the aromas and the tastes makes me nostalgic today.....

Traditionally mustard oil is used.

However, the commercially produced mustard oil now-a-days (in India and in India

grocery

stores here in North America) are a far cry from the hand extracted mustard oil

that was

available during those days.

If you live near a village or a small town in India, it is still possible to get

the cold

extracted mustard oil, but it is slowly disappearing - soon to be entirely

forgotten and

replaced by the commercial grade oil produced by large conglomerate companies.
