Guest guest Posted December 18, 2005 Report Share Posted December 18, 2005 Hi Lynda, If I want a lot of whey, I take a quart of fresh kefir, and pour it in to a large sieve lined with a large coffee filter and let the whey drip out the bottom of the filter. I usually let it sit on the counter for 24 hours. I end up with whey and a mild kefir cheese. If I didn't have kefir, I would do the same process with the best, plain yogurt I could find.
