They are clear, cellophane noodles, and can also be made of tapioca or rice or bean flour. In any case, they are really easy to digest and don't fall apart in broth. If you learn how to make a good Vietnamese soup with them, they are out of this world! They come in all kinds of sizes. The really really thin ones are cool and cook almost immediately. If you can't find the noodles by themselves, you can usually get " Thai kitchen " noodle mixes (tho I think those are rice, they eat about the same) and just don't use the flavoring packet. Vietnamese soup goes like this: 1. Make some broth (ala NT). Store it til you need it. 2. Heat the broth. 3. Chop some fresh vegies (thin slices of: onion, carrot, cabbage, kale, mint, basil, or whatever you fancy) and put them in the bottom of a big bowl. Kimchi too, if you want. 4. Add some noodles and meat to the broth: just til hot (if you want rarer meat, put the meat in the bowl with the vegies). 5. When the noodles are soft, pour over the vegies in the bowl. The stuff is really yummy. The vegies aren't overcooked. It is REALLY filling, even though it's very low calorie. If you have the broth handy, it takes hardly any time to make.
