I find it interesting that one of the recognized taste receptors on the tongue is " umami " for MSG. Funny--b/c all fermented foods have free glutamic acid in them (which is the naturally occuring precursor to MSG). I got out of this article that " the tongue is desinged to taste fermented foods " .
