Peanut Oil

What about peanut oil? How does it compare in the grand scheme of

god fats/bad fats. So many use it to fry turkeys etc. We were

thinking about getting a fryer and doing chickens....what do you

know about peanut oil?

Dona,

Peanut oil, like all vegetable oils except for olive and coconut, is a

compromise food. Traditional societies didn't eat liquid veggie oils

and neither should we.

If you're going to fry food, use lard or tallow. Saturated fats are

much more stable at high temperatures. FWIW, I think roasted chicken

is a delicious (and less messy) alternative to fried. Be sure to

brine the chicken before you roast it for the best flavor.

Not good. Very polyunsaturated, not very saturated at all, prone to

rancidity and harmful in any significant quantity even when fresh.
