Bear Ribs?

Sorry for the cross posting, but I need help!

Quick typing won me a package of frozen bear ribs from my local

freecycle. " Frozen butcher wrapped. This slab of bear ribs was from a

bear harvested last year. If you have ever had bear you know it has a

definite flavor, so if you are interested please respond. " I haven't

called the guy yet to arrange a time to pick up, but looks like it will

be mine.

Now what have I gotten myself into? I've never had bear ribs. I don't

like strong tasting meat (if this is strong). Any ideas? Tough,

tender? Slow cook, marinate, BBQ, seasonings? Eat the fat, don't eat

the fat? Tangy BBQ sauce or sweet? Make gravy from the drippings?

Serve what with it?

Mmmm bear ribs! Quite a freecycle snatch! Ribs shouldn't be tough. Bake in

oven covered with small amount of water in pan bottom, uncover for your

barbecue sauce, just like any other red meat. Slightly wild tasting. Smell

cooking will be wild but not unpleasant. Fat won't stick to roof of mouth

like venison. Shouldn't be much with ribs. It's all good.
