" Frozen butcher wrapped. This slab of bear ribs was from a bear harvested last year. If you have ever had bear you know it has a definite flavor, so if you are interested please respond. " I haven't called the guy yet to arrange a time to pick up, but looks like it will be mine. Now what have I gotten myself into? I've never had bear ribs. I don't like strong tasting meat (if this is strong). Any ideas? Tough, tender? Slow cook, marinate, BBQ, seasonings? Eat the fat, don't eat the fat? Tangy BBQ sauce or sweet? Bake in oven covered with small amount of water in pan bottom, uncover for your barbecue sauce, just like any other red meat. Slightly wild tasting. Smell cooking will be wild but not unpleasant.
