According to theis recipe--midway down the page, just cut in half-- http://www.westonaprice.org/foodfeatures/maximize_rawmilk.html Also, I use old cream for anything I use cream for pretty much. You can certainly make butter from it--cultured butter! Is very good quality and low in moisture. I don't make butter myself, but just sweeten the cream, add flavoring, whip in blender and voila! mousse. Also just add to smoothies. Go for it, girly.
