Ok, I admit to being really really new to WAP, and not knowing much- so

expect lots of questions from me!

My husband got me a deer this morning, we left the intestines, lungs,

stomach out in the field and most of the blood drained lugging it home..

that's ok- I don't think I was ready to try tripe or blood pudding yet!

I saved out the heart, liver, kidneys, sweetbreads, and something else that

looks a lot like the liver, but I don't think it is... it's about 1/2 the

size. Any ideas what this is?

Also, any suggestions on how to prepare these things to get the best from

them?

I'm also open to brain and tongue recipes. The bones, feet, and antlers are

claimed for the venison stock recipe (a la NT).
