Guest guest Posted November 21, 2005 Report Share Posted November 21, 2005 Question about turbo ovens...WAPF and Slow Foods both advocate slow cooking foods, as it causes proteins to gently unwind (more surface area for digestion) and retains the nutrient integrity of the foods. Does a turbo oven, even though it doesn't use microwaves, go against the " principle of slowness " ? Does it not affect the integrity of the foods that it cooks? And don't we advocate eating raw and rare meats? Mercola's page says that it cooks more evenly, without burning the outside and reducing undercooked interiors. So, I'm confused.
