Guest guest
I've read a little about it (very little). As far as health benefits, how is it? How does it compare to coconut? I'm looking for something lighter in flavor then both coconut and olive. Any sugestions?

Coconut oil is highly saturated, with a large fraction of medium-chain fats, which boost the metabolism and support the thyroid. Avocado oil is mostly monounsaturated (11.5% saturated, 70.5% monounsaturated, 13.5% polyunsaturated per the USDA database) so it's much more like, say, olive oil (13.5/74/10) though not quite as saturated. (Don't ask me why the numbers don't add up to 100. Maybe some fat-soluble compounds are affecting the percentages.) As a refined oil... eh. I'd say stick to actual avocados. -
