Truly Raw Cheddar Cheese is North America's first truly raw organic

pasture fed cheddar cheese. Unlike most other raw cheeses, Truly Raw

is never heated above 105 degrees (Fahrenheit) during the cheese

making procedure. Many so called raw cheeses are actually heated to

temperatures " just under " legal pasteurized temperatures of 161

degrees, denaturing enzymes and killing beneficial bacteria. It is

done primarily to offset the poor quality of milk used to make raw

cheese in the conventional market and to increase the activity of the

cultures that are added. The cheddar cheese is aged a minimum of 60

days.

You can't buy it online but there is an Amish farm in Central Pennsylvania

that will take a phone order and ship their cheese to you anywhere in the

US. This stuff is absolutely fabulous. Made from milk from cows fed only

grass -- no grain -- in the heart of some of the best dairy pasture in the

US. Email me for the phone number. I'm going out of town for 4 days so I

won't be able to get back to you right away.
