Of course the lactobacili and bibidobacteria produce lactic acids. I didn't know they produced acetic and all those other organic acids though. There is lots of lactic and acetic acids in sauerkraut. One of the reasons it is so good for the bowel. I had always assumed that it was acetobacter species making the acetic acid. I had actually seen reference to the generation of bacteriocins also. I wonder if the bad bacteria fight back with their own chemical weapons.
