Right, I didn't think out that reply very well.

Of course the lactobacili and bibidobacteria produce lactic acids.

I didn't know they produced acetic and all those other organic acids though.

There is lots of lactic and acetic acids in sauerkraut.

One of the reasons it is so good for the bowel.

I had always assumed that it was acetobacter species making the acetic acid.

I had actually seen reference to the generation of bacteriocins also.

I wonder if the bad bacteria fight back with their own chemical weapons.

P.S. do you have any good info on how the body metabolizes the optical isomers

of lactic acid?

Inulin is one type of FOS (fructooligosaccharides).

Small amounts are found in quite a few plants such

as chicory, burdock, and elecampane. The Japanese

developed a chemical process which is 98% effective

in changing white purified cane sugar into FOS.
