Guest guest Posted August 1, 2005 Report Share Posted August 1, 2005 Hi Just read your post on it. I've been doing it for awhile now and mixing the fermented coconut water into my liver tonics. Very nice. I was gettting acid reflux from the acidity in the tonics and this seems to have taken care of all of that. So there might be something to healing the gut. I buy in bulk to cut down on time. I buy 2 boxes of young Thai coconuts at the asian store for $22.00. That amount is 18 coconuts and will yeild about 2 galloons of coco water and 1/2 gallon of coconut meat. It takes me about 3 hours to whack through all these. I've kefired with both my regular kefir grains and Donna Gates expensive freeze dried grains. Can't say I taste any difference. Right now I'm using Donna's grains as I've got them. I drain the coco water into big glass jars and leave it on the counter overnight with a culture added. Pull off any white yeast film (happens here in Atlanta as the humidity climbs) in the morning and taste it. If it's getting tart i put it in the fridge ...if not I leave it until night and then put it in the fridge. It continues to slowly ferment after that. I add 1/2 cup to Curt's and my morning tonics (ie raw liver tonics). I been adding 2 raw egg yolks lately and this seems to help my digestion of all of this. No getting sleepy afterwards. The water from 18 coconuts should last me for a couple of months worth of tonics. Put if you were fasting on this stuff it would probably go fast though. The young thai coconuts have been fumigated though. But I brixed them and Florida coconuts we get here. Big difference ...the Thai's brix around 10 and the floridas at 4. Big taste difference also so I went with the Thai nuts. On freshness...your coconuts sound like they weren't really fresh. The meat should be white and the juice nice and clear or just a hint of milkiness. No pink or grey and no mold on the bottom of the white part of the nut. Do you have a good asian store with lots of turn over nearby? Since once you kefir the water and it last a good long time it might be worth a trip to get a couple of cases. Buy one and test it in the parking lot first though. Hope I see you again this fall. Are you going to the conference??? I saw said he is.. I don't know of any Asian markets all though there are probably some in the city, but I'm ordering direct from Whole Foods, so I'll have my coconuts right when they come in, although at a price more expensive than what you're paying. Of the 9 coconuts, I opened 8. 3 were clearly horribly purple, 2 were gray, and three were nice and white. The ninth had little brown bumps on the outside which may be harmless but I thought were sort of weird and not on the others, and given that five were bad, I decided I wouldn't even bother opening it. So I'm using the water from the three and returning the other six. How long do you find the meat lasts? I just through mine away from the good coconuts since I figured it would spoil quickly in the fridge. Maybe I should dehydrate it?
