Guest guest Posted January 25, 2005 Report Share Posted January 25, 2005 I make my stock in a crockpot because I am away from home when I work long shifts and I am not comfortable leaving my gas stove on. I have been listening to some tapes of Sally from a seminar given in San Francisco back in 1990 (I think). During the Q & A period someone asked this very question. Her reply was that since the liquid does not reach a boil which liberates the unwanted components as the scum we are supposed to skim off, she does not use the crockpot. One could boil to liberate the scum and then transfer to the crock pot (on the tape she said this would be too much trouble for her, as she likes to keep it simple.) You can definitely make stock in a crockpot (I assume you mean an electrical one) but you have to get one which will let you set the temperature low enough to just gently (barely) simmer the stock.
