Vietnamese cinnamon is so strong, savory and entrancing. Right now I have a small sealed packet that makes me woozy from 3 feet away. Organic is also more likely to be from a small producer/single plantation rather than blended from many sources to achieve a " standard " character, so there is more variety - some will be amazing, some not so. There are many crops for which some producers seek certification only as a competitive advantage - people will pay more even though the standard crop is not really a problem. My vanilla beans are the best I've ever seen and definitely organic - from a small, passionate grower who can't afford certification. Some of my dream vacation side-trips are Provence at the height of the lavender bloom, and the organic spice cooperatives - I know there's one in Costa Rica, one in India, and so many more I haven't heard of Can you imagine what the air must smell like?
