crust on soaked flours

Hi,

When I sit my doughs and batters overnight as

suggested in NT, I get a crust that never really goes

away during kneading. Anyone know how to resolve this?

Maybe a damp towel over the bowl/over the mix?

You can brush them with oil, or cover the container with a plate.
